I use Adobe Photoshop CS and Adobe ImageReady CS. (They come together.) I downloaded it via a torrent from www.torrentz.com, but if the torrent fights with you (I got a totally bitchy torrent the first time I attempted to download it), I still have the .dmg file that I could zip and upload for you. ^^
The way I usually do it on the Win-blows version is create your frames, put them all in one folder, then import the folder into ImageReady by going File -> Import -> Folder as Frames

*grin* I, too, haven chosen the path of the Needlessly Complicated™. It's a combination of being afraid to show my ignorance and insisting on figuring things out for myself. Stubborn Determination Mode™ comes in handy sometimes! ^_^
I haven't really tried it yet (I'm taking a photoshop/imageready class right now) but yeah, you should be able to open up a window called "animation" and then put all your pics on different layers, turn the layers on and off depending on the frame (you can create new frames in the animation box) and then import it all to imageready and save it as a gif there >_>
