I have no idea how to store fresh ginger. I could look it up, I suppose, but instead, I ask my friends.

In the fridge? On the counter? In a cool dark place? In plastic? Not in plastic? Help a girl out.

This cold's not going away, and I'm getting tired of babying it. :-(

Good Friday Morning.

I keep my ginger in a ziploc in the freezer. I take it out and grate or slice what I need and pop it back in. This works perfectly for me. It's much easier to grate frozen too!

I peel it later, but it's up to you. I'm getting a lot more milaeage out if my ginger this way. When I leave my ginger on the counter it gets all soft and if I keep it in the fridge it gets oogy. So, the freeazer it is. It's kind of fun!

i keep it in my egg holder thingy, which is kept free of eggs *just* for this purpose.

I had the ginger in a plastic bag on the counter, and it's feeling a little soggy, so I wasn't sure if it was suffering the moisture lock. The humidity of the fridge doesn't hurt it then?

I prefer to store it in my tummy. In a mug of tea is a nice alternative.

Otherwise, I put it in a ziplock bag in the fridge. It doesn't keep indifnitely this way, but it does seem to keep a while.

I don't know if this is the *correct* or *best* method, though.

I put mine in a ziplock bag in the freezer and just chop or grate it from frozen. Freezes fine and doesn't affect the final result - just don't try to thaw it first or it'll turn into a mess.

I read in an Indian cookbook once that the best way to store ginger is buried in a wee plant pot filled with earth. (Dry soil is best, I think.) It's supposed to keep literally forever, provided you water it once in a while, but not too much. Apparently if conditions are ideal, it even grows! This idea makes me happy. I keep meaning to try it!
